THEME OVERVIEW

This theme treats food as a deeply interconnected system that links biology, governance, markets, ecology, labor, identity, and culture. Participants examine how nutrition policy, public institutions, supply chains, gender roles, migration, and culinary traditions shape what people eat—and who has access to safe, affordable, and culturally meaningful food.

India provides a uniquely layered field environment where national nutrition missions, digital governance platforms, agricultural diversity, street economies, and ritual food cultures coexist. Nutrition is not studied abstractly, but as workflow, infrastructure, incentive system, and lived practice.

Through seminars, institutional briefings, market ethnography, culinary labs, stakeholder interviews, and structured policy studios, students move from “mission dashboard to marketplace to household kitchen.” The program integrates public health analysis with cultural interpretation—culminating in academically rigorous food-system proposals and ethnographic portfolios

LEARNING OUTCOMES

Participants will:

  • Map food systems end-to-end (production β†’ processing β†’ logistics β†’ retail β†’ consumption β†’ waste) using stakeholder, power, and incentive analysis frameworks.
  • Conduct structured market ethnography and household food narrative interviews with ethical consent protocols.
  • Analyze nutrition governance as public administration, examining digital monitoring systems, incentive structures, and last-mile delivery constraints.
  • Evaluate food safety and behavioral-change campaigns through institutional, cultural, and political lenses.
  • Examine food access inequities related to gender, labor, migration, geography, and income.
  • Interpret culinary identity as social narrative, memory practice, and economic system.
  • Produce faculty-gradeable outputs including a food-system improvement memo, equity feasibility assessment, and mini-ethnographic culinary portfolio with analytic commentary.
