Students begin with a seminar series on food systems theory, political economy of agriculture, and logistics architecture. Workshops introduce market ethnography, interview ethics, and systems mapping tools.
Field immersion includes wholesale markets, retail contexts, peri-urban farm visits, cold-chain mapping exercises, and waste audits. Guest lectures from food policy researchers and nutrition experts deepen the analytical frame.
The program culminates in a structured proposal or ethnographic portfolio synthesizing field findings.
Students will:
